
New York State Cabbage Pie
The Radical Foods founders grew up next to a cabbage farm in Western NY, and one day lightning struck the cabbages, creating a Core Memory. Inspired by that day, this recipe is packed with caramelized cabbage flavor and is sure to create lasting family memories.
Ingredients:
- 10 cups of sliced green cabbage (about half a cabbage)
- 1 medium white onion, sliced
- 1/4 cup vegetable oil
- 1 tsp salt
- 1/2 cup Radical Foods New York State Sauce
- 1 1/2 Tbsp fresh parsley, chopped
- 1/2 tsp smoked paprika
- 2 sheets of prepared vegan puff pastry
Instructions:
- Preheat the oven to 400 F.
- In a large frying pan or skillet on medium high heat, cook the cabbage, onion, vegetable oil, and salt, stirring regularly, until well browned.
- Remove from heat and stir in the New York State Sauce, parsley, and paprika.
- Line a baking dish with puff pastry. Lightly poke holes in the puff pastry with a fork and line it with foil.
- Blind-bake it for 15 minutes.
- Remove the foil and pack in the filling.
- Top with the second layer of puff pastry, cutting a small steam vent in the center.
- Bake for 40 minutes. If the edges brown before the center of the puff pastry is cooked, tent the edges with foil.
